Ingredients
- 2 lbs chicken wings, flats & drummettes separated, patted very dry
- 1 tbsp aluminum-free baking powder (optional but helps crisp)
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
Garlic–Parm Toss
- 4 tbsp unsalted butter, melted and warm
- 3 cloves garlic, very finely minced (or 3/4 tsp garlic powder)
- 1/2 cup finely grated Parmesan cheese
- 1–2 tbsp chopped fresh parsley (or 1 tsp dried)
- Pinch red pepper flakes (optional)
- Lemon wedges, for serving (optional)
Instructions
- Prep air fryer: Preheat air fryer to 390–400°F (200–205°C) for 3–5 minutes. Lightly oil the basket.
- Season wings: Mix baking powder, salt, pepper, and garlic powder. Toss very dry wings until evenly coated.
- Air fry crisp: Arrange wings in a single layer (work in batches if needed). Cook 18–22 minutes, flipping or shaking basket halfway, until deep golden and very crispy (internal temp 175–185°F for tender wings).
- Make garlic–parm: In a large bowl, stir warm melted butter and garlic. Add hot wings, toss to coat, then add Parmesan, parsley, and red pepper flakes; toss again.
- Serve: Plate immediately. Finish with extra Parm and a squeeze of lemon if desired.

- For max crisp: air-dry salted wings, uncovered in the fridge 1–8 hours before cooking.
- Don’t crowd the basket—airflow = crispness. Batch if needed.
- No baking powder? Skip it—just dry wings really well and cook a bit longer.
